Paella
Pad Thai Station
Garden Station

Garden Station

A selection of fresh vegetables and fruits accompanied by flatbreads and crackers. Displayed with assorted dips. This station is enhanced with a selection of domestic and imported cheeses. May be presented as your guests arrive, along with Iced Tea and Lemonade, or during Cocktail Hour.

Raw Bar Station

Selected oysters, shrimp, and little necks presented on multi levels of shaved ice. Garnished with lemon wedges, lime wedges, and fresh seaweed. Accompanied by sauce Mignonette, sauce Bloody Mary, and Horseradish sauce.

Paella Royale

Traditional Spanish saffron seafood rice dish baked with rock shrimp, calamari, mussels, and langoustine. Combined with roast chicken and Chorizo sausage, flavored with multi-colored peppers, and plum tomatoes. This station is served in our giant Paella pan and may be enhanced with Sangria wine, garnished with fruit.

Sushi Station

Prepared in front of your guests by our sushi chefs. Presented to inspire not only the senses, but also the spirit. The creation of each item starts with the selection of the freshest and highest quality ingredients, and captures the full array of Asian tastes, textures, and colors.

Pasta Station

Cooked in front of your guests by our chefs. Your selection of pasta and filled pasta (Ravioli, Tortellini) with your guests’ choice of artichoke hearts, roasted red peppers, Calamata olives, tomatoes, caramelized onions, and wild mushrooms. Your guests’ choice of extra virgin olive oil, roasted garlic, fresh plum tomato basil, or wild mushroom and Madeira.

Carving Station

Your choice of premium offerings such as:

  • Filet of Beef
  • Orange Glazed Fresh Turkey Breast
  • Breast of Duck
  • Loin of Pork

This station is displayed on carving boards with selected sauces, condiments, and relishes.

Red Square

Trio of smoked salmons (vodka dill, pastrami and natural) accompanied by domestic caviars and salmon roe. Presented with samosas, capers, red onion, crème fraiche, chive sour cream, and scallion cream cheese. Cocktail breads, specialty crackers, and Russian blinis accompanied by a display of frozen international vodkas.

The Creperie

Classic French Crepes cooked in front of your guests and offered with selected fillings:

  • Seafood
  • Chicken “Chasseur”
  • Vegetable Medleys

May be presented as a dessert station with assorted sweet fillings and toppings.

China Town

A taste of China. Includes:

  • Peking Duck with Scallion Brushes
  • Julienne of Cucumber and Hoison Sauce wrapped in a Traditional Chinese Pancake
  • Steamed Sweet and Spicy Paper Thin Vegetarian Dumplings served with a Lime and Ginger Soy Dipping Sauce
  • Cold Sesame Noodles with a Peanut Sauce
  • Steamed Shumai
  • Chicken San Choy Bau: Minced Chicken with Water Chestnut, Bamboo Shoots, and Cashew Nuts set in Endive Leaves

Tuscan Pizza Station

Grilled on a baking stone in front of your guests. Includes:

  • Capri: Fresh Tomato, Basil, Mozzarella, Drizzled Olive Oil
  • Chevre: Tomato, Goat Cheese, Purple Onions, Fresh Spinach
  • Mushroom: Cremini, Shitake, Tomato, Mozzarella
  • Seafood: Shrimp, Tomato, Basil, Purple Onion

This station is enhanced with Baby Arugula salad and Chianti wine.

South of The Border

Indulge in the ebullient, friendly, and informal Mexican style of cooking. Enjoy:

  • Mushroom, Chicken and Cheese Quesadillas
  • Tenderloin of Pork Pasilla
  • Tamales Con Salsa Verde
  • Homemade Guacamole with Fresh Tortilla Chips
  • Roasted Corn and Black Bean Salsa

Tuscan Station

Heaven for the vegetarian; a bountiful display of traditional Tuscany dishes:

Miniature Sweets

Choice Of six from an array of finger desserts. As an alternative to the “Viennese” table. Offering such delights as:

Pad Thai Station

Asian rice noodles mixed with our own Thai sauce, scented with lemon grass, and sautéed in front of your guests. Served with a selection of vegetables, shrimp, and chicken. Topped with fresh crushed peanuts.

Espresso Station

Espresso, rock sugar sticks, and dark chocolate covered espresso beans. Can be combined with miniature sweet station.

Comfort Food Station

Foods you grew up with–and still can’t get enough of:

  • Mini Burgers, Cheese Burgers and Bacon Cheese Burgers
  • Mini Barbecued Pulled Pork Sliders
  • Crunchy Cole Slaw and Sweet Potato Fries, Fried Onion Loafs and Fried Mac and Cheese Balls
  • Dill and Sour Pickles, Jalapeno Peppers, Spicy Southern Fried Chicken

Served with all of the familiar condiments and sauces.

You Don’t Have To Be Jewish

A Melting Pot of Middle Eastern, Mediterranean, Spanish, German, and Eastern European Influences:

  • Mini Reuben Sandwiches, Mini-Knishes, Blintzes filled with Sweet Cottage Cheese with Blueberry Sauce

Refresh and invigorate your guests on a hot Summer day with ice cold frozen Margaritas, Pina Coladas, and Strawberry Daiquiris. Served on the side deck by our Caribbean crew.

Gelato Bar

True Gelato straight from the streets of Rome and Florence. Your guests will have a choice of eight invigorating and thirst-quenching flavors such as premium chocolate, coconut, grapefruit, mango, banana, and raspberry. Set up on the side deck and served by our Gelatoristos.
